دراسة الأحماض الدهنية لأربعة أنواع من الاسماك البحرية
Abstract
هدفت الدراسة الحالية لبيان نوعية وكمية الأحماض الدهنية في أربعة أنواع من الأسماك البحرية الشائعة في محافظة البصرة وهي الصبور Tenualosa ilisha والجفوت Nematalosa nasus والبياح Liza carinata والضلعة Scomberoides commersonianus الطازجة والمجففة والمخللة والمدخنة. وقد تم الحصول على عينات الأسماك الطازجة ذات النوعية الجيدة من السوق المحلية في البصرة وحال شرائها وضعت في صندوق معزول من الفلين يحتوي على الثلج المجروش وكانت العينات بدرجة حرارة 4˚م، وعند وصولها للمختبر أجريت عليها الفحوصات الكيميائية وبعدها قسمت على ثلاث مجاميع عوملت على انفراد بالتدخين والتخليل والتجفيف مع متابعة عمرها الخزني عند حفظها بالتبريد بدرجة 4˚م أو بالجو الاعتيادي 25˚م.
